Harvesting takes place at the beginning of each spring. While the season lasts about 5-6 weeks, we only extract the purest of maple water, which is only available over a few days during the season.

Containers of the required size which are usually of food grade are used in collecting maple water. All containers must be thoroughly cleaned to prevent contamination and ensure that the sap comes out clean.

The collected sap are collected on a daily basis and stored appropriately (38degrees F) for further processing. The collected sap is processed in a way that all possible contaminants are eschewed and bacteria growth is prevented.
